Kosher salt vs Table salt
They are not interchangeable spoon for spoon. Table salt is fine and dense, about 5.7 grams a teaspoon, while kosher salt is coarse and airy, and the two big brands differ from each other: a teaspoon of table salt equals roughly 1¼ teaspoons of Morton or 2 teaspoons of Diamond Crystal. Swap by volume and you can easily over- or under-salt. Kosher's larger flakes are easier to pinch by hand; table salt dissolves faster into batters and brines. Weigh it and the brand gap disappears.
