How to substitute a pan

Find the pan your recipe needs in the chart, note its volume, and pick a pan you own with a similar volume. Pans within a cup or two of each other are usually interchangeable.

If your replacement pan is deeper, the batter will be deeper too and need longer in the oven. If it is wider and shallower, it will bake faster. Keep the oven temperature the same and rely on a doneness test rather than the clock. Scaling a recipe at the same time? Use the recipe scaler.

Can I use a 9x13 pan instead of two 9-inch round pans?
Yes. Two 9-inch round pans hold about 16 cups total and a 9×13 pan holds about 14–15 cups, so they are close. The cake will simply be a single layer rather than two.
What can I substitute for an 8-inch square pan?
A 9-inch round pan holds almost exactly the same volume (about 8 cups) as an 8-inch square pan, making it the easiest swap.
How do I adjust baking time for a different pan?
A shallower, wider pan bakes faster; a deeper pan bakes slower. Keep the temperature the same and start checking for doneness several minutes before the original time.
