Why doesn't a teaspoon of active dry yeast weigh the same as a teaspoon of water?
A teaspoon measures volume, not weight. Active dry yeast is less dense than water (about 3.13 g versus 4.9 g per teaspoon), so the same volume has a different weight. Weighing in grams is the most accurate way to measure it.
What is the difference between instant and active dry yeast?
They weigh the same — one packet is 7 g (2¼ tsp) for both. The difference is potency: instant yeast has more live cells and can go straight into the dry ingredients, while active dry is a little weaker and is traditionally dissolved in warm liquid first. To use active dry in place of instant, add about 25% more.
